Oatmeal Raisin Cookies

For 4 dozen cookies

Ingredients
1/2 cup + 6 tablespoons unsalted butter, room temperature
3/4 cup brown sugar, firmly packed
1/2 cup granulated sugar
2 eggs
1 tsp. vanilla
1 1/2 cups unbleached all-purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
3 cups oatmeal, old fashioned, uncooked, not instant
1 cup raisins

Directions
Heat oven to 350°F.

Combine flour, baking soda, cinnamon and salt. Mix well and set aside.

Using a large bowl and electric mixer set at medium speed, beat both regular and brown sugar until creamy. Add eggs and vanilla and combine well.

Add the flour mixture.

Add oats and raisins and combine completely.

Using a spoon that accommodates your desired cookie size, drop dough onto ungreased cookie sheets.

Bake 8 to 10 minutes, or until light golden brown.

Cool 1 minute on cookie sheets, then place on wire racks to finish cooling.
