Sesame Seed Cookie

For 4 to 5 dozen cookies depending on size

Ingredients
2 1/2 cups unbleached all-purpose flour
1 cup butter, at room temperature
1/4 cup sugar
1/2 cup brown sugar
1 egg, room temperature
1/4 tsp. baking powder
1 1/2 tsp. ground cinnamon
1/8 tsp. salt
3/4 cup sesame seeds

Directions
Preheat oven to 350°F.

Combine and mix together the butter and sugar until smooth. This should be very creamy in appearance.

Add the egg and combine. Add the cinnamon and continue mixing.

Sift together the flour, baking powder and the salt.

Stir into the butter mixture until well-incorporated.
The dough should be very plIable and easily managed.

Squeeze or spoon off equal pieces, about 1 inch balls, and roll them into 2 to 3 inch sticks.
Don’t make them too thin, as they will burn.

Roll in sesame seeds.

Place cookies one inch apart on a cookie sheet.

Bake for 20 minutes or until cookies are lightly toasted.

Remove from cookie sheets to cool on wire rack.
